Ingredients:

  • 2 full racks of pork back ribs (approx. 3–4 lbs)
  • 2–3 tbsp BBQ Bodega Sweet Heat spice blend
  • 2 tbsp olive oil
  • ½ cup apple cider vinegar or apple juice (for moisture while cooking)
  • Optional: ½ cup of your favorite BBQ sauce (for finishing glaze)

Instructions:

  1. Prep the Ribs:
  • Remove the silver skin from the bone side of the ribs.
  • Rub the ribs with olive oil for moisture and adhesion.

2. Apply the Spice Blend:

  • Generously coat both sides of the ribs with Sweet Heat spice blend.
  • Let sit for 15–30 minutes (or cover and refrigerate up to overnight for deeper flavor).

3. Cooking Options:

Oven-Baked Method:

  • Preheat oven to 300°F (150°C).
  • Wrap ribs in foil (add a splash of apple cider vinegar/juice inside each packet).
  • Bake on a sheet tray for 2.5 hours.
  • Optional: Unwrap, brush with BBQ sauce, and broil on high for 3–5 mins for caramelization.

Grill Method (Indirect Heat):

  • Set grill to 275–300°F and set up for indirect cooking.
  • Place ribs on the cooler side of the grill.
  • Cook for 2 hours, spritzing with apple juice every 30 mins.
  • Finish over direct heat, brushing with BBQ sauce if desired, for a nice glaze.

Serving Suggestion:

Serve with cornbread, coleslaw, or grilled corn on the cob.
