Ingredients:

  • 6 bone-in, skin-on chicken thighs
  • 2 tbsp BBQ Bodega Espresso BBQ Spice Blend
  • 1 tbsp brown sugar (optional for a touch of sweetness)
  • 1 tbsp olive oil
  • 2 tbsp soy sauce
  • 2 cloves garlic, minced
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • Salt & pepper to taste

Instructions:

Prep the Chicken:
  • Pat chicken dry and season all sides with salt, pepper, and Espresso BBQ Spice Blend.

Make the Glaze:

  • In a bowl, mix olive oil, soy sauce, apple cider vinegar, garlic, Dijon mustard, and brown sugar.

Marinate:

  • Pour glaze over chicken and marinate in the fridge for at least 1 hour (overnight for maximum flavor).

Grill or Bake:

  • Grill: Preheat grill to medium. Grill thighs 5–7 minutes per side until internal temp reaches 165°F.
  • Oven: Preheat oven to 400°F. Place chicken on a lined baking tray and bake 35–40 minutes, basting with extra glaze halfway.
